If blending, add the coconut water and blend again. If you are leaving the fruit whole, layer the fruit in the lolly mould and pour in the coconut water. For both ways adjust the amount of coconut water you use depending on your taste preference and how many lollypop moulds you have.
If blending - once completely blended, taste, and adjust to your own personal preference, adding more fruit, or more coconut water. Pour the mixture into ice lolly moulds and freeze overnight. Serve and enjoy!
