- Set your oven to 200 degrees, spread the chips on a baking tray and drizzle over the olive oil. Use your hands to ensure the chips are fully coated in the oil, then season well. Roast in the oven for 40 minutes until crispy.
- In an oven proof dish, sprinkle the flour over the chicken breasts to evenly coat the top then drizzle over the honey. Season well then add to the oven for the final 20 minutes of the potato cooking time, basting occasionally with the juices at the bottom of the dish.
- For the final 5 minutes, steam the green vegetables until cooked.
- Once the chicken breast is cooked through, serve alongside sweet potato chips and green veg with a sprinkle of parsley on top.
This makes a great Sunday roast alternative and you could even adapt this to cook a whole chicken for the family, just check the cooking time on the chicken and include more sides depending on what you fancy!
