Week 3. Fancy a quick, easy and yummy recipe to try as a winter warmer? Let us introduce you to our Leek & Potato Soup 🍵

Ingredients
25g unsalted butter
1 white onion, diced
2 large leeks, sliced
500g maris piper potatoes, washed
1 litre chicken stock
150g greek yogurt 0% fat
Black pepper
Fresh chives to serve

Cooking Directions

  1. Add the butter to a large saucepan over a medium heat, once melted, add the onion and leeks and cook for around 10 minutes until completely soft.

  2. Chop the potatoes into small, bite size chunks then add to the pan followed by the stock. Simmer for 20-30 minutes until the potatoes are cooked.

  3. Remove from the heat, then add the greek yogurt and a generous amount of black pepper.

  4. Use a stick blender to blend until smooth. (If using a blender/food processor, allow the soup to cool before blending in batches, then reheat as necessary).

  5. Serve with chopped fresh chives.
